臺灣飲食文化華語教材編寫設計與研究– 以越南學習者為例

Abstract

臺灣飲食文化是多元且富有創意的,深受歷史、地理、族群和外來文化影響。從原住民的傳統飲食到漢人移民帶來的飲食習慣,再到日治時期及戰後的融合發展,臺灣的飲食文化呈現出強烈的地方特色和多樣性。臺灣的夜市小吃、傳統美食及融合性料理等,已成為世界各地遊客了解臺灣的重要窗口。隨著華語學習的普及以及臺灣飲食文化的知名度,臺灣飲食文化逐漸成為華語教材中的一個重要內容,並具有發展潛力。本研究採用混合研究方法,結合文獻分析法、需求問卷調查法、深度訪談法以及教材評鑑表。研究者首先探討臺灣飲食文化的歷史與變遷,以及相關研究,進一步了解臺灣飲食文化的背景及其在教材編寫中的發展潛力。同時,透過需求問卷調查與深度訪談方法,了解越南籍華語學習者對臺灣飲食文化華語教材的興趣與需求。此外,本研究亦使用教材評鑑表,收集華語教學專家以及越南籍華語學習者對本研究所設計的臺灣飲食文化教材的評價與建議。本研究特別設計了教材接受度與意見調查。結果顯示,53.1%的越南籍受訪者表示「非常同意」,34.4%表示「同意」使用專門設計的臺灣飲食文化華語教材,兩者合計達87.5%。此數據充分證明將飲食文化元素融入華語教材的可行性與必要性。本研究所設計的教材亦獲得華語教學專家及越南籍華語學習者的好評,顯示臺灣飲食文化華語教材的發展潛力。研究結論指出,以臺灣飲食文化為主題的教材設計能有效提升學習動機與華語能力。本研究成果不僅提供具體的臺灣飲食文化教材開發模式,也為越南籍華語學習者設計以臺灣飲食文化為導向的華語教材提供了實證依據,對未來相關研究具有重要的參考價值。
Taiwanese food culture is rich and inventive, heavily influenced by history, geography, ethnic groups, and foreign elements. From the traditional diets of indigenous peoples to the eating habits brought by Han Chinese immigrants, and then the fusion development during the Japanese occupation and post-war era, Taiwanese culinary traditions showcase strong local identity and diversity. Taiwan's night market snacks, traditional dishes, and fusion cuisines serve as key ways for tourists worldwide to learn about Taiwan. As Mandarin learning becomes more popular and Taiwanese food culture gains broader recognition, Taiwanese culinary traditions are increasingly being included in Mandarin teaching materials, indicating promising growth potential. This study uses a mixed-methods approach, including a literature review, a needs questionnaire, in-depth interviews, and a teaching material evaluation form. The researcher first examines the history and development of Taiwanese food culture, along with related studies, to better understand its background and potential for inclusion in teaching materials. At the same time, through the needs survey and interviews, the study aims to identify Vietnamese Mandarin learners' interests and needs related to Taiwanese food culture in Mandarin education. Additionally, feedback from Mandarin teaching experts and Vietnamese learners is collected via a teaching material evaluation form focused on Taiwanese food culture content developed for this research. The study specifically designed a material acceptance and opinion survey. Results show that 53.1% of Vietnamese respondents strongly agree and 34% agree with the use of specially developed Taiwanese food culture Mandarin teaching materials, totaling 87%. These findings strongly support the feasibility and importance of including food culture elements in Mandarin teaching resources. The materials also received positive feedback from experts and learners, demonstrating potential for further development of Mandarin teaching materials focused on Taiwanese food culture.The study concludes that including Taiwanese food culture in teaching materials can effectively increase motivation and enhance Mandarin proficiency. The findings offer a practical model for creating Taiwanese food culture teaching resources and provide empirical evidence supporting the development of Taiwanese food culture-focused Mandarin materials for Vietnamese learners, which has significant reference value for future research.
